For the month of June, I posted a salad recipe each day.

Berry Salad

It seems fitting to close the month with dessert. When I make this salad for tennis matches I always come home with an empty bowl. At tennis matches I serve it without a topping, but in the photo you can see two of our favorite toppings. I’ve listed ideas at the bottom.

Pasta Salad
June 29
This salad is so easy to make and keeps well a day or two afterwards in the refrigerator. I often make it for BBQs because it’s easy to make a large amount using a full bag of pasta and 1 ½ packages of seasoning.

Beet Salad
June 28
This salad is a tantalizing mix of multiple flavors and textures. It takes a little more preparation time, but it’s worth it. I learned to make this at a Cavalo Point cooking class. Their goal is to get you cooking locally, and seasonally. They strongly support the local farmer’s markets and you’ll probably need to visit one to get the ingredients such as plucots (cross between plums and apricots) and golden beets.

Spanish Salad

I got this salad from my sister-in-law. She likes it because you can prepare it ahead of time and leave in the fridge. Also as there’s nothing in it that can spoil, you can take it to a BBQ on a hot day and not worry about it sitting in the sun for hours.

Take-Out Salads

Mushroom Salad

Even if you’re not crazy for mushrooms, this salad is a light refreshing treat. I’m always surprised by how much I like this as I rarely eat raw mushrooms.

Canadian Campagnarde

The weather has turned cool again so today’s salad is a winter salad. I came up with this during our time in Canada, thus the name. It’s similar to the Salade Campagnarde that I posted on June 6, https://www.nicolatrwst.com/salade-campagnarde/ but the ingredients are more filling to help one fight the elements. In my case, 20 mph winds.

With restaurants closed, I read that people are missing Mexican food the most. So today’s salad is a Mexican salad. This is a great family salad. Also this salad has a lot of variation so feel free to experiment.

Lentil Salad

This salad is very popular with my family. I make extra and eat it all week. (This batch serves 6). In summer serve it cold with BBQ. It goes well with sausage and old-style mustard. In winter you can serve it warm as a meal or a side salad.
