It seems fitting to close the month with dessert. When I make this salad for tennis matches I always come home with an empty bowl. At tennis matches I serve it without a topping, but in the photo you can see two of our favorite toppings. I’ve listed ideas at the bottom.

This salad is a tantalizing mix of multiple flavors and textures. It takes a little more preparation time, but it’s worth it. I learned to make this at a Cavalo Point cooking class. Their goal is to get you cooking locally, and seasonally. They strongly support the local farmer’s markets and you’ll probably need to visit one to get the ingredients such as plucots (cross between plums and apricots) and golden beets.

The weather has turned cool again so today’s salad is a winter salad. I came up with this during our time in Canada, thus the name. In my case, 20 mph winds.
